Believe it or not, soaked and blended cashews are mouth-wateringly creamy in this recipe. Not only are they delicious, they are a great source of monounsaturated fats. A diet high in monounsaturated fats has proven to protect against a range of cardiovascular diseases and even cancer! Cashews also contain a higher protein to carbohydrate ratio than other nuts. This means that they are a perfect snack that keeps you feeling fuller for longer. Raw cashews provide a creamy, subtle flavour to the cheesecake, but they also retain more nutrients such as magnesium, iron and zinc than roasted cashews. Soaking the cashews also removes enzymes in the cashews known as “phytates” that hinder vitamin and mineral absorption, making digestion easier!
